OMG BBQ Sandwich

I had big plans for dinner tonight but I got carried away with painting and with a tired and grumpy wife, I decided to make something quick and easy. It turned out so good I had to post the recipe!

Serves 4

4 rolls

1 cup TVP
4 cups water
2 tbsp extra virgin olive oil
1/2 tsp natural smoke flavor
4 tbsp bbq sauce
1 small onion diced
1 c mushrooms sliced
1 cup green onion diced
vegan cheese (optional)
Boil the TVP (it should be dehydrated) in the water for 2 minutes.
Turn off heat and let soak for 10 minutes.
Strain the TVP (it should be very soft and pillowy).
Add olive oil to a large pan. Turn heat to medium.
Saute the TVP for 5 minutes.
Add onion and saute until TVP starts to brown and the onions are transparent.
Lower heat.
Add Smoke flavor and saute for 1 minute.
Add mushrooms and saute for 2 minutes.
Add bbq sauce and sautee for 1-2 minutes.
Add the green onion and mix well.
Turn off heat. Place on rolls and add vegan cheese!
I strongly suggest toasting your rolls in the oven with vegan butter and garlic powder before serving. Also- add your vegan cheese to the already toasted garlic rolls and place back in the oven for 1 minute to melt the cheese a little. After that the rolls will be cheesy and garlicky and ready for the bbq tvp!
I served this with simple steamed broccoli
